Pork Carnita Tacos

My household is doing a 30 day fit challenge for the month of May. We are replacing 2 of our meals each day with a full meal replacement Protein Shake, and then having an amazing dinner and 2 snacks.

Tonight is day 1 and I found this recipe on Pinterest that just spoke to me from Kitchen Escapades for Pork Carnitas. Looked really easy (which is what every busy mom looks for) and super tasty.

The whole family LOVED it, even my picky husband who likes the same boring food all the time. hahah

Ingredients

  • 4lb Boneless Pork Butt, fat trimmed and cut into 2 inch cubes
  • 1 1/2 tsp Salt
  • 3/4 tsp Pepper
  • 1 tsp ground cumin
  • 1 onion, peeled and halved
  • 2 bay leaves
  • 1 tsp dried oregano
  • 2 TB fresh lime juice
  • 1 1/2 Cup Water
  • 1 medium orange, juice and keep the spent halves

 

 

Instructions

  1. The original recipe is made for a dutch oven, but I used a crock pot.  So remember the Crock Pot liner!!!
  2. Put all of these ingredients in the crock pot, and cook on LOW for 8 hours.
  3. Get a slotted spoon and put the pork on a lined baking sheet, throw away the bay leaves, oranges and onions. Keep the juice.
  4.  I poured the juice on top of the meat and broiled  for approximately 20 minutes, I turned my meat around half way through to make sure it was nice and crispy and to not burn.
  5. Enjoy!!

Watching for Watches

A couple years ago I started running 5k’s with my best friend. When we registered for our 3rd one together I decided I wanted to get a mile tracking watch. I did a lot of research and at the time everyone seemed to be obsessed with Garmin. Decided to purchase a Garmin Forerunner 15 because at the time it was the top of their line. Loved it for the outdoor runs, but whenever I was training at the gym, running the track it wouldn’t work. I had to purchase another piece to track indoors. Boo!! I had already spent so much on the watch, I didn’t want to purchase more and more add ons.

Then I begged my husband for a Fitbit HR for Christmas. This thing has been the biggest POS I have ever seen. My phone was more accurate then this thing, and I don’t carry my phone half the time!  I burn 500 calories just letting it lay on my desk. Its so uncomfortable. The steps are way off. And my friends and I climbed an incline close to us and it stopped at 100 floors (which I know was more, because we weren’t done when it stopped!)

I just want a watch that will give me the heart rate, steps, and be an actual watch!! But I have already spent $300+ on these watches together and my husband thinks I have lost my mind with looking at more.  I got an email the other day from Spartan introducing a Microsoft smartwatch. It advertises you can upload your own workouts into the system and it will tell you when to move to the next workout, etc. I am intrigued by it, but it is another $250, and I do not own any MicroSoft equipment.

My husband bought the Samsung Smart Watch and seems to love it, but he also doesn’t work out and need the features that I do.

What is your favorite Smart Health Watch?! I’m tired of wasting money on these watches just to lay around because they don’t work!!!

HELP!!

Keto

Going on month two of incorporating Keto into my food plan. I had amazing results last month, so why stop?!   I also have about 30 days until the Spartan race, and I want to burn as much fat on my body as possible!  So I have been experimenting with different recipes (and please remember that I am NOT a chef, or even a great cook lol)  But I am trying my best at giving my family and myself the healthiest options possible.  We do not have any food allergies, or gluten intolerances.

I was on Pinterest a while back and came across this recipe for Keto Snickerdoodle cookies, and I have been hesitant about making them because I remember snickerdoodles the way my grandma made them. I was scared that it was going to ruin my favorite childhood memory. But I was bored yesterday, craving something sweet and had all the ingredients… So I gave it a whirl, and needless to say they disappeared!! My mom went straight for them the second she came in the door from work, my kids devoured them after school and no one even asked what was in them!! SCORE!!!

The recipe for the Snickerdoodles are…

  • 2 cups Bob’s Almond Meal/Flour  (this is where mine might not be as Keto friendly as her’s (I put regular flour)
  • 1/2 cup Stevia in the Raw
  • 1/2 cup salted butter
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Pre-heat oven to 300
  2. Add all ingredients to a mixing bowl and mix until well combined.
  3. Roll into 15 ball and place on a greased cookie sheet.
  4. Place in the oven and bake for 5 minutes.
  5. Remove and press dough down with a fork.
  6. Return to oven and cook for 18-20 minutes.
  7. Allow to cool for 5 minutes.

Becoming a Spartan

Two years ago I started my health journey to lose a few pounds and hopefully find some energy to be a great mom to my boys.  Along the way it has become so much more!! The inches continue to melt off, the energy is out of this world, and I haven’t been sick in the last 2 years!

Four weeks ago my trainer wanted to change my food plan a little and wanted to incorporate Keto into what I was already doing. I didn’t follow it to a T, because well… I love my carbs.  I really didn’t feel like it was doing much, mainly because I wasn’t giving it my 100% .  When I start doubting what I am doing I always do my measurements, my weight and a side by side picture.   The weight was EXACTLY the same, so I was a little bummed.. Did my measurements and was down 8 inches over all (pretty cool!) But then I did my side by side, and umm… well Pictures really do say a thousand words!!

Going forward I want to see what I am completely capable of, so for the Month of April I am following the 30 day system with my nutrition company, and also Keto.

I am also training a lot harder for the Spartan Sprint next month.  Starting with today! Four of my good friends joined me in a training put on by the Spartans and can I just say, I have some work to do!!  Doing these with friends makes it so much more fun. I love laughing while working out

He wanted me to drag the bag (65lbs) across the floor, but I had to open my mouth and say it was TOO light.. So he jumps on! Not only did I go the full length of the carpet with him on it, but I went pretty fast! My workout partner went half way and was struggling. And that’s ok!! We are all in different stages of our health journey’s!!

Anyway, today… it was 2 hours of straight workouts, with active rests, in a parking lot (which means concrete!)

I felt like I did pretty well keeping up with the group, even though we did a LOT of burpees, push ups and jumping jacks (which seem to lock my calves up!)  Even running around the parking lot I felt GREAT!!!  Oh!! They wanted us to do firemen drills with our partners and my partner had a messed up ankle so I did both turns with her on my back, I LOVE these kinds of workouts!!!  Made sure I had plenty of protein, lots and lots of water. And rest. I didn’t want to over do it today, so I have been watching movies all afternoon.

Until about 2 hours ago, I started getting a horrible pain in my left arm, shoulder and going down my back. I don’t know what is going on. But I know it takes a lot to knock me to my knees in pain, and this is doing it!! I just want to vomit, it hurts so bad. I tried taking a nap and can’t sleep. So I will rest tomorrow, along with Intermittent fasting. And come back on Monday with a fresh start.

Sunday Funday

About 30 miles from my house there is this amazing Rec Center. They have several different Zip lines, soccer fields, play areas and a stair incline that has 200 steps!  About 6 months ago, a friend invited me down to do a workout. I struggled every single minute of it.  I made it up the incline 1 time, running (actually walking most of it!) down the back trail that is about 1/4 of a mile.  We then jogged across the parking lot to the play ground, ran up the hill and slid down the kid slides. This was a great work out and so much fun, we laughed the whole time!

The months started to get colder and less light, so we decided to wait for warmer weather before we came back.  During this time I started working with my trainer, and doing a lot of weight lifting, and spin classes for endurance.

We met back at the Incline about 4 weeks ago.  I was there early and decided to get a head start. Finishing the day off with 4x up the incline. Two times RUNNING down the back trail, doing sprint runs up the incline as far as we could ( got to 50 steps without stopping) I ended up climbing over 100 FLOORS!!!

This week I went up 4 times, walked down the trail 2 times, did 2 sprint runs up (still landing on the 50th step)  At the bottom of the incline we did push ups, tricep dips, and squats while we let our heart rates rest.

After that was done, and our group went on with their days, Cas and I decided to check out the dirt trails on our bikes. Man are my legs BURNING!!! But felt so good, and those trails were FUN!! I am ready to go back for more!!

Fit Happens

A couple weeks ago I picked up these awesome journals at Target, one for me and one for a friend. The front says Fit Happens. So I open it up and there is a place to write 3 things you are grateful for every morning (this is HUGE for me to wake up feeling happy, fulfilled, and ready to concur my fears)

My goal to live life fit today…

One thing I appreciate about my strong bod today is…

Rate your day, what kind of workouts you do, your foods, and what your mood looks like.

At the bottom of today the Fit Tip is – Eggcellent Breakfast : [Study] egg-eaters lost 65% more weight then bagel-noshers. With all 9 essential amino acids, protein-packed eggs build muscle + burn fat!!

Eggs are my FAVORITE thing to eat throughout the day!! I come home from my workouts and have 3 scrambled eggs, with bell peppers and sometimes turkey sausage.  Then I make hard boiled eggs to have for snacks. Can never have enough eggs!

Its a new month, new goals… I am ready to lose another 10lbs this month and crush my body challenge that ends March 30th. What are your goals this month?!

No time for workouts

As a new mom with two little boys under the age of 2, there was NO time for working out. It wasn’t even on my radar of something to do!! If I got dressed in the morning, that was my workout, and I felt accomplished.

As the years went on, and I tried to workout, scheduling the workout was THE workout.  I attempted to be the 5am club and go before they woke up, and before my husband left for work. But my workouts really weren’t anything special and never got me any results. Then I attempted the 11pm workouts after my husband would come home from work… same results as the 5am, I just wanted to go to bed!!

Then my boys got a little older, and we became more active outdoors when it was nice. Taking walks to the park, and then finding myself sitting on the side playing on my phone while THEY tired themselves out. Walked the dogs, but never truly burnt any calories to make up for the junk I was eating at home!

Fast forward to the past year, I am blessed they are off to school all day and my husband is gone at work. I have the house ALL TO MYSELF!! Which means I never want to leave it, I don’t want to run errands, I want to binge watch all my shows. I want to relax, because when they are home it’s always on the go. Sport events, school functions, etc etc etc.

This is not going to get me on the right track! I needed to find a balance for me. I have started working out the minute I drop them off at school. 9am drop off, 9:30 I am at the gym (with an action plan!) and back home by 11 at the latest for lunch and to get things going. These past few weeks I have stepped up my game, because I was crazy enough to sign up for the Spartan Race here in Colorado. So… my new game plan.

Monday is REST day from the gym. It is my time to get my house cleaned, meals prepped and get my business lined up for the week. I did ALL the laundry today, everything is out of the drier, everything is folded and hung!! This is a huge accomplishment for me!! And at 7:05pm I just looked down on my fit bit, to see that my REST day, was actually a nice productive day. With a good calorie burn, running those stairs between each load added up real quick!! And then took a short walk to pick up the boys from school since it was nice outside. And the best part was I have a clean house and workout done together!!

Back to the gym in the morning for my spin class… and my husband is joining me for the first time in 4 years!!! Should be interesting🙂
